We went to a cane grinding and syrup making over the weekend. It was done the old fashioned way and is the best cane syrup I have ever tasted. The cane stalks are squeezed between two big iron rollers. The juice is cooked in a regular cane boiler until the consistency is right and then strained through cheese cloth into a wash tub. Before it is completely cooled it is bottled. I had an idea how it was done, but I had never seen it. The grinder was originally powered by a mule, but it had been converted to run off of a 5 hp Briggs and Stratten. The boiler was gas fired. jim
